The idea of writing such a book came to me when confronted by a young bride who fought shy of the kitchen, never having gone into one. I've done many things in my time but nevertheless I firmly believe that you cannot ignore cooking. It is neither practical nor advisable to 'outsource' your food all the time. So with a steely resolve, do enter your kitchen. Cooking is neither difficult nor tedious. With so many cooking aids out in the market it has been made so much simpler and easier. I have targeted only the true novices and provided them with recipes and directions to make it absolutely explicit and perhaps give them a start to cooking food the way mother made it. The recipes are all the ones you require to know for every day cooking adding a few variations to encourage them to provide the variety we all crave and instill the confidence that you need not merely cook 'dal bhat' every day. The quantities are approximately sufficient for just the two of you. When you have gained confidence you can invite friends-only one or two at a time is advisable for some time- and increase the raw material accordingly. I have made good use of the pressure cooker and the mixer-grinder. In my opinion these are two innovations that have made things so easy in the kitchen of even modest means. I strongly recommend you begin with both. You may try using the Microwave as you progress. The recipes chosen are those that go fast, use little oil and spices and need little labour and taste delicious.
