This book can be termed as an attempt to collect, summarize the information on diet and nutrition of Ayurveda thus making it a reference guide for UG and PG Students of various branches of Ayurveda. The objective of present book is to provide a complete guide on dietary substances at one place, thus making it easy for Ayurvedic learners.

Dr. Supriya Kllianpur The author is graduate in Dravyaguna form Rajiv Gandhi University of Health Science. She has 4 Years of teaching experience and also has experience in Reserch. She has 12 publications in National And international level Seminar. She is presently working as Assistant professor in Shree Swaminarayan Ayurveda College and PSM Hospital, Kalol, Gandhinagar, Gujrat.
Dr. Rohit A.Gokarn The Authour is a Post Graduate in Rasashastra from Rajiv Gandhi University of Health Sciences andhas obtained Ph.D form IPGT & RA, Gujarat Ayurveda University. He has 7yrs of teaching experience. He has worked as Investigator in various research projects. He has guided Post graduate students and has 37 papers published in National and International Indexed Journals. He is presently working as Associate professor and Head of the Department of Rasashastra and Bhaishajya Kalpana, Shree Swminarayan Ayurveda College and PSM Hospital, Kalol, Gandhinagar, Gujrat.
"Aahara" is essential for the sustenance of life. Following the proper "Aharavidhi" prevents the onset of diseases. Many of the life style diseases, which we come across currently, are due to improper food habits. Ayurvedic classics have laid great importance to "Ahara" and the rules of taking food with respect to the time, quantity, etc factors.
Ahara is life of living being. Happiness, voice, life, satisfaction, power, intelligence all are depended on Ahara. All work which a person does to run his life like agriculture, business has Ahara as its base. So Ahara is base of life says Acharya Charaka in his Sutra Sthana 27th Chapter.

Wholesomeness of food enables cleansing the inner self. Refinement of the inner self furtherhelps to alert the mind and intellect, accelerates elimination of illusions and ignorance.
The book entitled "Mahabhaishajya Aahara" discusses in detail mainly the "Aharavargas" mentioned in Bhavaprakasha Nighantu. Each of the dietary substance is discussed with respect to its Botanical correlation, regional names, morphology, property, nutritional values and finally their therapeutic importance and form in which it can be used. In case of drug controversy, the difference in opinion has been discussed. The details of contemporary food articles has also been added in each chapter like Rice flakes (Poha), Rice brain oil, Skimmed milk, toned milk etc. The chapter on Aaharavidhi discusses about the rules of taking food mentioned in Charaka Samhita and Dravyaguna Sangraha of Chakradatta. In addition, a chapter on "Nutrition and Dietetics" has been added with the intention of making this book a complete reference guide for diet and nutrition for students of Ayurveda. The chapter on Anupanavarga has been taken mainly from Dravyaguna Sangraha from Chakradatta. In the chapter on "Tailavarga", along with the taila properties, Concepts of oil rancidity etc. which is very relevant current context has also been discussed.
This is an earnest attempt to compile the relevant references of Ahara from all available text and arrange them according to the contextual manner for the ease of Ayurveda scholars. The U.G and P.G Syllabus of Dravyaguna includes the study of Aharadravya in the syllabus, hence this hook should serve as a reference for dravyaguna students and we intend to benefit the students of other streams like swastavrutta, Samhita Siddhanta etc. also.
