India is made up of people from sev- eral faiths, and the gulfs between them are substantial, including dietary customs and prohibitions. There are various reli- gions and cusstoms in northern India. The Hindus and Sikhs will not eat beef; the orthodox Hindus and Jains avoid onion and garlic, considered "passion-induc- ing"; the Parsis, who came to India in the seventh century from Persia, gave up eat- ing beef as a gesturre of thanks to the Hindu ruler who gave them asylum; and the Muslims and Jews abstain from pork but relish beef, the meat of sheep, and chicken.
