About The Author

Jyoti Nikunj Parekh is a well- known figures in the field of vegetarian cooking since 1969, she has been teaching Indian and international vegetarian cooking along with the art of fruit and vegetable carving to a large number of students.

Apart from being a busy housewife and mother, Jyoti regularly teaches the art of cooking, bonsai, candle-making and gift wrapping. There have been a number of demonstrations of her arts at various places in India. She has also displayed her skills in many cities around the world- Tokyo and Yokohama in Japan; Boston, New York, Honolulu and Minneapolis in the U.S.A.; Toronto in Canada; London, Heidelberg and Antwerp in Europe and Hong Kong. A regular contributor to many leading periodicals and newspapers, both Indian and International, she has also given a number of radio and television programmes on the above mentioned arts.

She has been a pioneer in the field of miniature tree-growing in India and has co-authored the books Wonderworld of Tropical Bonsai and Wonderworld of Bonsai and Saikei with her husband Nikunj.

Her other book Wonderworld of Gift Wrapping, co-authored with her daughter Sonali, is also on the stands.

How To Follow This Book

This book is designed to make your microwave cooking as easy as possible. It has been the result of extensive experimentation and adaptation of various recipes. My intension has been to help you understand and follow the recipes correctly. The Ingredients are always clearly listed, separate from the step-by-step method and have been given in the order of their use in the recipe.

Correctly measuring the ingredients is a necessary part of cooking. If you want the perfect result from your cooking, spend some time measuring with care, as given in the recipe. Thoughout the book, measurements are given in the metric system. The weights appear in grams (gms.) or Kilograms (kgs.) Standard cup measurements are also used. Weighing is more accurate than measuring but for convenience, standard cup and spoons are used. A Standard 8 ounces (ozs.) measuring cup, is commonly used.

1. A standard teaspoon (tsp.) and tablespoon (tbsp.) is used to measure small quantities.
2. There are numerous Chef’s Tips given throughout the book. They are brief and simple to follow and will help you to achieve successful results.
3. There are over a hundred Indian and International vegetarian recipes presented here, covering different types of food. However, these are not the only vegetarian recipes that are possible with a microwave oven. You can easily adapt similar recipes. Wherever possible, compare the recipe you want to adapt, to a similar microwave recipe. Compare the quantity and type of ingredients and study how they are used. Use similar power settings and cook for the same length of time.
4. Remember microwaves cook by weight, so if you double the recipe, you must increase the cooking time. And if you halve the recipe, reduce the time to almost half.
